Bean Salad

A 2-3 bean salad with diced celery, red onion, oil, balsamic, and spices. Truly yummie.

 

Use any type of beans you like... red kidney, romano, white beans, pinto, chick peas, etc.  Be creative!

 

In this recipe, I used 2 cans of beans – red kidney and pinto (I think).

 

So easy, and so healthy :)

Ingredients

2 can beans (of your choice) – rinsed and drained
2-3 celery sticks – diced
1/2 red onion – minced
Parley or coriander to taste (fresh) – chopped
Oil
Vinegar – red wine and balsamic
Sugar – 1 tbsp.
Salt and pepper

 

Put all ingredients in a bowl.

Mix dressing in a separate bowl so that you may adjust to taste. When to your liking, mix in with the beans.
