Butterscotch Square

Mom's recipe – a favourite at Christmas time.
They always ask for it.

Ingredients

3 egg yolks (keep egg whites for topping)
3/4 cup brown sugar
1/2 cup butter – room temperature
1 tsp. baking powder
1 tsp. vanilla
1 1/2 cup flour

 

The making of...
Beat egg yolks. Add brown sugar and butter, and mix well.
Mix dry ingredients together, and then add to first mix. Consistency will be thick.
Press in the bottom of a square pan.

Topping
3 egg whites
1 1/2 cup brown sugar

Beat until fluffy (I like to use a hand mixer). Pour over bottom mixture.

Bake at 350F for 20 minutes. Let cool and cut into squares.
*While it's baking, the topping will bubble up – that's OK, it will drop down when it comes out of the oven.
