Cabbage Rolls
This recipe has been in the family for over 50 years. Also known as "Pigs in the Blanket" or "Golumkies", I recently found out this is aunt Rita and uncle John's recipe. Uncle John is Polish, so who knows better than him :)
Aunt Rita told me that when they make them in a large pot, they actually pile them one on top of the other. This is one of their Christmas meal... so they make lots.
They also make perogies. Will try to get the recipe and post.
Meat Mixture
2 lbs ground beef
1 lb ground pork
*I also used 1 lb of Italian ground sausage
1 cup rice – just cooked and let cool
1 cabbage – cooked enough to roll with meat
2 onions – fried, just soft, not browned
Salt and pepper
1 can sauerkraut
1 can tomato sauce
1/2 bottle of ketchup - must be Heinz!
**I also added a bit of tomato juice.
Preparation

Spread some sauerkraut in bottom of pan.

In large bowl, mix uncooked meat, onions, cooled rice, salt, and pepper.

Roll mixture (like an egg) in cabbage leaves and place in pan. You can stack them. I also added shredded carrots in between layers.

Cover with remainder of sauerkraut. Top with tomato sauce and ketchup.

Put a few leaves over top so that it does not burn.

Start at 400F for 20 minutes, and then at 300F for 3 1/2 hours.
When cooked... remove and let cool...
As you can see, I have two pots/pans. Like I said, do not double unless you're expecting an army!
Let cool, remove top leaves, and serve with a shit load of mashed potatoes topped with the cabbage roll juices... Yummie is all I can say!!!!!!!
