Chickpea Sauce
1 garlic clove – minced
6-7 strips red pepper
1-2 anchovies
1 can chickpeas (almost all drained)
Sauté all but chickpeas in a bit of oil 'till garlic starts to smell (good that is, but do not burn).
Add the chickpeas, salt and pepper. Simmer 2-3 min.
Serve with rigatoni and fresh cheese (Romano or Pecorino).
