Chili Con Carne
This recipe is from Fanny Farmer. It is made with beef cubes and is very different from your typical chili.
I very often make this as comfort food.
Ingredients
4 tbsp. shortening or vegetable oil (I use olive oil)
2 onions - chopped
6 cloves garlic – chopped
3 lbs beef cubes (stewing beef)
1 tsp. salt
4-6 tblsp. Chili powder
1 tbsp. ground nutmeg
1 tbsp. oregano
Cayenne pepper to taste
4 cups beef broth
**I normally end up adding 1-2 cups more as it evaporates while simmering.

1. Brown onions and garlic...
Heat oil. Add onions and garlic and sauté until soft.
2. Add meat...
Add beef cubes and salt. Brown until no longer pink.
Add spices and cook 5 min.
3. Let it Simmer...
Add beef broth and simmer partially covered for about 2 hours. Stir occasionally.
Serve with rice and/or beans.
**I normally serve it with papardelle.
