Orange Chiffon

A recipe from our Up-North house neighbour... Colette.
I absolutely love this cake.

I've yet to make it.

Ingredients

1 1/2 cup cake flour
2 tsp. baking powder
1 cup sugar
1/4 tsp. salt
1/4 cup vegetable oil
4 eggs (separated)
1/2 tsp. cream of tartar
1/3 cup orange juice
1/2 tsp. lemon extract

 

The making of...
Preheat over to 350F.

Sift the flour, baking powder, sugar and salt into a large bowl. Mix in the oil, egg yolks, orange juice and beat. Set aside.

Beat the egg whites separately until foamy. Add cream of tartar and continue beating until stiff but not dry. Blend a fourth of the whites into the batter, then fold in remaining whites.

Spoon the batter into a tube pan (not greased).

Bake for 30-40 minutes. Invert pan on a rack for 1 hour. Cool completely.

Frosting
1 tbsp. butter
1 1/2 cup icing sugar
1/4 cup orange juice
1 tsp. orange rind (grated)

Mix and spread on cake.
