Pasta Carbonara
I need my bucatini carbonara at least twice a month. So delicious.
I don't fuss with cream or all the spices they normally call for. Just eggs, cheese, and bacon. That's it!
Ingredients
Box of Bucatini pasta
2 eggs – beaten
Mozzarella - grated
Bacon
Salt and pepper
Optional – Fresh Pecorino Romano or Parmigiano Reggiano
The making of...

Cook bacon pieces to a crisp, set aside, and reserve some of the fat.

Boil pasta... al dente.

Mix eggs, salt, pepper, and grated mozzarella in a bowl.

When pasta is done, put in egg mixture, mix, and then add add bacon bits. I normally like to add a bit of the bacon grease – maybe 2 tbsp.

Optional: if you find it too dry, add about 1/4 cup of the pasta water.
Hubby likes to add Parmigiano cheese over. I do not, I like my pasta wet.
On a second trial, if you find there was not enough sauce, use an additional egg and more cheese.
