Pork Tenderloin... a la Marmalade with Mozzarella
Yes, I know, a strange mix with pasta, but it was yummie.

Ingredients
2 lb (900 g) pork tenderloin
4 oz (120 g) Canadian Mozzarella, sliced (or Provolone, Cheddar, Gouda)
2 tbsp (30 mL) Dijon mustard
2 tbsp (30 mL) orange marmalade
2 tsp (10 mL) fresh rosemary, chopped
Freshly ground pepper, to taste
4 large slices of ham (or prosciutto)
Preparation - BBQ or Oven
Preheat grill to medium heat. or oven to 425F.
Make a lengthwise cut in each tenderloin, without cutting all the way through, and open like a book. Place Mozzarella cheese on each tenderloin, then close up.
In a bowl, mix the mustard, marmalade, rosemary and pepper. Brush tenderloin with this mustard mixture.
Cover/wrap with ham slices so cheese is secured inside. Hold together with toothpicks.

Oven method: Place the prepared pork tenderloins in an oven-safe dish and cook for about 15 minutes, depending on the thickness of the pork.
Serve with vegetables and grilled orange quarters.
