Roast Chicken and Potatoes

 

Very easy and very tasty.


 

 

Ingredients

Oil

Pieces of chicken
1 onion – sliced
½ red pepper – cut in strips
2-3 plum tomatoes (can)
6 potatoes – quartered and unpeeled

**I used 3 peppers... red, yellow, orange. Two onions, 2 fresh tomatoes, and 8 potatoes... all due to the amount of chicken I had, which was 4 pieces and 5 drumsticks.

 

The making of... 

  1. Put a bit of oil in roasting pan. Add onion and red pepper at bottom.

  2. Brush chicken and potatoes in oil.

  3. Put chicken in one corner of pan and potatoes in other. Break tomatoes on top.

  4. Add salt and pepper, paprika, rosemary, and 4-5 basil leaves (I used dried).

  5. Dot with butter.

  6. Bake @ 375F for 1½ hour.
