Scalloped Potatoes

WOW is all I can say.

Made this last weekend (Feb. 2014), and it was nothing like we had before. Perfection was the word.

Recipe was found on Food.com. The exact link is: http://southern.food.com/recipe/scalloped-potatoes-85629

Ingredients

4 cups thinly sliced potatoes
3 tbsp. butter
3 tbsp. flour
1 1/2 cups milk
1 tsp. salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese – for the sauce
1/2 cup grated cheese – to sprinkle on top
Paprika

The making of...

  1. In a small sauce pan, melt butter and blend in flour. Let sit for a minute.

  2. Add all of cold milk, stirring with a whisk. Season with salt and cayenne.

  3. Cook on low until smooth and boiling, stirring occasionally with a whisk.

  4. Reduce heat, stir in cheese, and removed from heat. Continue stirring a bit as it might stick at bottom.

  5. Place half of the sliced potatoes in a lightly greased one quart casserole dish.

  6. Pour half of cheese sauce over potatoes.

  7. Repeat with second layer of potatoes and cheese sauce.

  8. Sprinkle the remaining cheese on top and top with some paprika for color.

  9. Bake uncovered for about 1 hour at 350°F.
