Stuffed Chicken
Very easy and tasty.
Made with roasted potatoes and spinach (also on this page) and fried mushrooms.
Most excellent. Will definitely make again.
Ingredients
Chicken fillet
Prosciutto (I used Genoa)
Soft cheese slices – Havarti or Ementhal (I used Friulano)
Salt and pepper
Parsley – chopped (I used dried)
Oil and butter
White wine and chicken broth
Prepping
Pound fillet. Slice lenghtwise if too thick..
Spread prosciutto, cheese, salt, pepper, and parsley.
*I also added fresh basil leaves. No regrets.
Roll up and secure.
Frying chicken...
Slowly sauté fillet in a bit of oil and butter until golden.
Add wine and broth (about 1/2 cup of each).
If it evaporates too fast, add a bit more.
Done and served...
When done, let cool for a few moments, slice and serve.
Here, I made roasted potatoes, spinach, and fried mushrooms.
Top with the pan sauce.
