Tondini
Wow, have not made these since 1991. Must do again and get some pictures rolling :)
The tondini were generally served with a veal roast (Christmas Eve meal), and tondini in the middle of the plate with some sugo (sauce) over them. Yummie of course :)
Ingredients
6-7 old potatoes – cooked and mashed
2 eggs – beaten
Oil
Salt
Flour (until consistency is soft)
Prepping...

Cook potatoes and mash.

Add beaten eggs, salt, oil and mix.

Add flour. Mix until dough is soft.
Shaping and Frying...

Slice dough in small pieces.

Roll to form cigar-like shapes then form small doughnuts. Press ends to close loop.

Flour them to prevent from drying.

Fry in oil until golden.

Spread in a bowl separated with paper towel.

Serve with meal, and smother with sugo (sauce).
