Vegetable and Bean Soup

Ingredients

Oil and butter
1 onion – diced
Carrots – sliced
Celery (including leaves) – cut in pieces
Cauliflower – cut in pieces
1/2 green pepper – cut in pieces
1-2 potatoes – cut in pieces
2-3 mushrooms – cut in pieces
1/3 can plum tomatoes – chopped
Can white kidney beans – rinsed
Garlic and parsley
2-3 oz. white wine
1 tbsp. (or more) flour
1-2 chicken cubes
Water
Sugar

 

The makinf of...

  1. Sauté all vegetables in oil and butter until onions are soft. Add tomatoes and stir.

  2. Simmer for a while then add enough water for the desired quantity of soup.

  3. Add chicken cubes, wine, and a pinch of sugar.

  4. Mix flour mixture and add to soup to thicken. Cook slowly until vegetables are tender.

  5. Add beans and keep simmering.

  6. In the end, add a small quantity of small pasta. Cook until pasta is done.
